Owner and Pastry Chef , chef de cuisine,  Ahlam Ziani's, brings her wealth of experience and boundless passion for food to Thousand Oaks, with her restaurant, La Princiere French Bakery patisserie café.
 Ahlam’s culinary journey is a testament to her deep-rooted passion for baking and cooking, instilled within her from her upbringing in the charming city of Toulouse, France. Surrounded by the aroma of freshly baked breads in her family kitchen, Ahlam was introduced to the artistry of French cuisine by her mother, a masterful pastry chef whose expertise became the foundation of Ahlam's culinary prowess.
From her earliest days, Ahlam eagerly assisted her mother in the kitchen, honing her skills and cultivating a love for the culinary arts. As she grew, so too did her ambition, leading her to explore a diverse range of culinary environments, from bustling bakeries to prestigious restaurants, luxurious hotels to serene resorts.
Ahlam also traveled quite extensively through countries such as Algeria, Turkey, Morocco, Tunisia and Dubai, and worked in restaurants to learn the cuisine.
Eager to share her culinary creations with the community and central to her philosophy is the art of breadmaking, where patience and craftsmanship converge to produce loaves of unparalleled flavor and texture. By fermenting her dough slowly over long hours, Ahlam allows the flavors to develop fully and the gluten to break down, resulting in bread that is not only delicious but also easily digestible—a stark contrast to the mass-produced loaves found in factories.
At the heart of Ahlam's culinary ethos lies a commitment to quality and integrity.
